This is a well-used, very-soiled, very-stained restaurant kitchen-instruction 3-ring-binder manual with approx. Many of the pages are dated April 1, 1982, which seems to make the source of this manual the original store in Santa Barbara, California, according to this quote from the Sambo’s Wikipedia page. By November 1981, the company filed for bankruptcy. Neither the name change nor bankruptcy protection reversed this downward trend, and by 1982 all except the original Sambo’s at 216 West Cabrillo Boulevard in Santa Barbara, California. Many of the pictures are quite amusing, given the simplicity of the dishes shown. There’s even one showing an unopened mini cereal box leaning in an otherwise empty cereal bowl. There’s also a certain amount of preparation instruction in each section. The sections are – Back Up Preparation / Breakfast / A. Extras / Special Extras / Sandwiches / Hamburgers / Calorie Counters / Dinners / Children’s Menu / Desserts. Condition – as mentioned above, lots of use, soil, staining, which I kind of find more interesting than if this was a nice fresh clean book that never left the manager’s office..
